The most interesting place I ever ate mexican food was in UlaanBataar the capital of Mongolia. It was a blended Mexican/Indian restaurant. Cheap though.
Halpinator’s right. Anything north of the Red River and you might as well just order the chicken strips off the kids menu.

my first comment here probably shouldn’t be one word, but “duh” is the only response i can come up with. - i live in kansas… so i know about the lack of decent and non-scary mexican food. sorry about that bud.
Shaun, instead of bad “Mexican” food in Kansas you could have had some good Mexican food served up with a side of Hepatitis A! A Pappasito’s near my home in north Houston did just this. Now, thousands of people are lining up for vaccinations.
And, if you think Kansas “Mex” is bad, I’ll tell you it gets worse. I’ve eaten “Scotch-Mex” in northern Scotland at a full fledged restaurant and not just a little fast food type shop. The “salsa” that set all the local’s mouths on fire was nothing more than diced tomatoes. Not even cilantro, onions, salt, or any other seasoning to spice it up. Pathetic. I went there with a group I was working with, but in the three weeks I was there after that I somehow managed to never eat there again.

A tortilla folded in half with melted cheese and cut up chicken nuggets inside is NOT a quesadilla. Not even close.
No pico + No guacamole + No lettuce + No cilantro + No smile on my face = Not Mexican

My basic flight rule: stick to Starbucks. Pack snacks. Eat when you get there.
